http://track-chinapost.com/result_china.php?order_no=RP101406107CN shows your seller shipped the parcel on Nov 22. now is rush season, shipping processing is slow. such airmail might need wait about 4 to 8 weeks to reach Portugal.

Should the tracking say dispatch when it's ship by airmail from China to Portugal?

yes and no.
dispatch means the parcel was given to airline. After that, It will take another 7 to 10 days to catch flight space. Then it will take another 2 to 4 weeks waiting for sorting,import customs clearance and scanning in Portugal import warehouse . Total might take 2 to 6 weeks.

it means the parcel passed Guangzhou customs. Next stage it will waiting for flight to Portugal for 1 to 2 weeks and then wait another 2 to 3 weeks for import processing in destination country. total you need 2 to 6 weeks to get it in your country.

The tracking in the portuguese postal office says dispatch, that means that the package has left China?

it should be outside china now. But leaving China is just a small step. There will be another 2 to 5 weeks transit through many airports between China and Portugal. You need some patient.
