I can't seem to find any tracking information on this item. Can anyone please tell me where it is?

you can track it in http://track-chinapost.com/startairmail.php, there should be some tracking result.

If tracking result is "Success find: 0 items!", it means the tracking number is invalid. China Post has NOT received this parcel. then you should report fraud to paypal and claim refund.

Could it be that the post office hasn't updated the information yet? because that's what the seller from AliExpress is saying.

it is possible. sometimes china post might delay updating the data for about 1 or 2 days.
